Does anyone know why Captivate 19 is missing categories in the Quiz Preference menu?

Can you please give some details?  Are you talking about Global Preferences or Project Preferences. All categories are available AFAIK, unless you have a corruption issue. The change in CP2019 is that often categories are collapsed, click the triangular button to open them.
