Hi! Let me help you. All the settings required for your quizzing needs can be located under Edit->Preferences->Quizzing->General for Windows.  All you need to “check” is the “Include the shuffle answers” option. For Mac, the “Preferences” is available under the “Adobe Captivate” menu. 

For individual question settings, you have an option shuffle the responses under Visual properties->Question Properties->Answer options->Shuffle answers (icon) 

You can activate it under Preferences, Quizzing, General. If you are on Windows that menu is under the Edit menu, on Mac under the Captivate menu.
