Our team has a graphic designer who normally creates custom PowerPoint templates for our various courses. Can we import custom assets (designs) into Captivate so that each of our courses has a custom look?

You don’t tell which version you are using. With the exception of the most recent version 12 all previous versions have a Project library. You can import different type of assets to that library: Bitmap images, SVGs, video, audio clips. You talk about templates but I think that is a typo. Captivate and PPT are both based on a theme, not a template.
